Government support often incentives innovation, but only a narrow definition of innovation is recognized and valued; innovation needs to be recognized on the micro-level, outside of large technological innovations. Because we found that the concept of “innovation” to have totally missed the kinds of innovation developed by small scale food processors, we gathered a few stories to show that innovation is alive and well amongst small scale food processors!
